I plan on making a mostly crafting-based character, and I will be crafting gemstones. Since I plan on being able to craft things other than that, I'd like to see who my competition would be in various areas, or see if there is a vacancy I could fill e.g. "the town could really use a fletcher so we didn't have to buy our arrows from the next town over."

Rook is a 200000 large city. Most mundane tasks can be covered by NPCs, no need to go to next town over.
Im curenty trying to fix a guild system for Rook, that has all kind of crafting and profession guilds in it, including fgletchers, bowyers and etc (and will offer unique benefits to guild members) but don't know when it will be done. That said, players can and usually sell stuff cheaper than shops, while simultaneously making a profit in their downtime.
Mundane wise we have I think 2 people going metalworking. And another 2 alchemists.
Magic crafting is more popular, with plenty of craft wondrous, a single craft arms and armor, and a single craft rings. Also one craft wands.

Thanks for the response. So since you are the world builder, I figure I should ask you too. My character will be cutting gemstones, so naturally I'll need the raw stone to do this from. Are there any raw gems that aren't available? Also I'm not seeing Craft: Metalworking, is that like a combination of Craft: Weapons and Craft: Armor but restricted to metal things? I'm probably going to grab Craft: Jewelry, Bows, maybe Clothing

If you wanted to do mundane metalworking I'd pick up profession: Metalworking. For the most part the game seems to reserve craft for things that are useful to adventurers. If you were so inclined you could probably create a craft for it as well (though I presume shroud was just referring to people with weaponcrafting or armorcrafting in a group).
There isn't much going on in the way of mundane crafting at the moment. One of my characters has weaponsmithing and armorsmithing (and magic crafting of those) and there is at least one other blacksmith with weaponsmithing. I don't know about the alchemists but if shroud says there are two he's probably right. There may be another character with a mundane craft, but I haven't heard about it.

I work on releashing a handful of functionable guilds that do actually include weavers and bowyers/fletchers (no gem focused guild in it though, go make your own!). Gryphyx is the one to talk to about what is available in the setting and what not. So far we didn't have a gemcutter so gems aren't used much. As for exotic materials, some are available, some not and some are restricted, the wiki has the complete list i think. i put craft(metalworking) because i dont have access to the character sheets. i know dirk is making both metal weapons and metal armors, but i dont know if he has the 2 crafts or just craft(metal) or something. as far as alchemists go, my second character (Aran) is an alchemist, and when i get a bit of time to tweak his downtime thread he will open shop. there is also at least one more alchemist, primrose i think, so i know that there are at least 2

Ah, gotcha. Planning on guilds providing lodging? Never had stuff to lock up before and I don't really know the building rules so that would be convenient. I decided on Jewelry and Bows, since the majority of clothing like winter cloths, wigs, scarves etc don't have a crafting DC.

If any crafters, magical or mundane, need a place to work or lodging then 'Miere Magick' is an available building to use in the Central Market district.
It's effectively a magic research and development building replete with symposiums, crafting space, lodgings, several libraries and a bar and grill (with brewery!) so you'd be welcome to reside there.
You'd only need to contact Miere Klerrin in the in character downtime thread in Downtime Activities to request lodging and access to the facilities.
